Can You Fill My Appetite?

I am a terrible cook. It's not so much that I can't cook, but that I don't LIKE to cook. Thankfully, I have a husband who enjoys it, otherwise we would eat the same three things for dinner for the rest of our lives.

That being said, everyone now and then I get bit by the bug--especially when I see what my friend's are cooking--and I attempt a recipe. Sometimes it's a disaster. Sometimes it turns out pretty OK.

This was a pretty OK attempt. My friend at Runs to Get Waisted made this recipe, Carrot & Orzo Salad. Then another friend, A, made it. I liked how it looked both times, so I jumped on the bandwagon. Side note: I might hate cooking, but I LOVE looking at recipes. So, when I saw this one, I got sucked down the worm hole of Budget Bytes recipes. So many good looking ones!

I didn't have parsley, so I subbed in mint. I think parsley would have been better, but I liked the mint. Personally, I thought it could use a little more acid. It calls for lemon juice, and maybe mine just sucked it all up, but I didn't get any zing from it. It's a great recipe, though and delicious, especially the roasted carrots with cumin. YUM!

I managed to squeeze in a run, too. Temps were good, so I ran outside. Now, it was also 9:30 at night. What does that mean?

It sucks, right? I live in a SAFE neighborhood. The kind where you see cops on the street all the time. A quiet suburb. Doesn't mean I'm heading out unprepared. Expect the worst. That's, unfortunately, my motto.
I ended up with two very sweaty miles. The weather turned that evening so it was a little more humid than I like. But, I felt great and that's what matters.

Now to get my swims in!

  1. I am the same way about cooking - I hate to do it. Thankfully my DH loves to cook or we would live on takeout.

  2. Yay! A recipe win! I am notoriously bad about taking my pepper spray when I run! I need to be more diligent!
